Step by Step Instructions
Step 1
Add half lime and 6-8 mint leaves in a glass. Use a muddler, or the handle of an wooden spoon. Muddling is the act of mashing leaves together and crushing them to release the oils and flavor of the mint.
Step 2
Then add 2 tablespoon simple syrup and 2 tablespoon lemon juice. Simple syrup can be made ahead of time by boiling two tablespoons sugar and two tablespoons water until it dissolves. Once the syrup is dissolved, let it cool in the refrigerator.
Step 3
Fill your glass with ice, and then top it with club soda.
Garnish with lime slices and a sprig mint.
Enjoy.!!
Notes
- If you want to make this for a crowd, pulse the fresh mint in a food processor with a splash of water, or roughly chop it with a knife. Muddling the mint in each individual glass would be a giant task
- Adjust the sweetness and tartness to your liking
