Step by Step Instructions

Step 1

Heat the olive oil in a large pot over medium heat. Add the chopped onion and minced garlic, and sauté until the onion becomes translucent and fragrant.

Step 2

Add cumin powder and cook for couple of minutes
Add the chopped spinach, frozen peas, and water / vegetable broth to the pot and bring it to a boil. Reduce the heat to low and let it simmer for about 15 minutes.

Step 3

Stir well and let it simmer for another 10 minutes until the peas are cooked through and tender.

Step 4

Using an food processor or a regular blender, carefully puree the soup until smooth. If using a regular blender, work in batches.

Step 5

Return the pureed soup to the pot and season with salt, pepper and nutmeg to taste. Give it a good stir and let it simmer for an additional 2-3 minutes to allow the flavors to meld together.

Step 6

Remove the pot from the heat and serve the spinach and pea soup hot.

Garnish it with lemon oil if desired.
