Ingredients

  • For Ragda
  • 250 gms white peas (vatana)
  • 1 cup water
  • 1/4 tsp turmeric powder
  • 1/4 tsp salt

  • 2 tsp chicken masala
  • 1 tsp salt

 

  • For Date Tamarind Chutney
  • 200 gms jaggery
  • 1/2 cup water
  • 15 gms tamarind
  • 1 tsp red chili powder
  • 1/4 tsp black pepper powder
  • 1/4 tsp dry mango powder (amchur)
  • 2 tbsp sugar

 

  • For Spicy Coriander Chutney
  • 2 cup coriander leaves with stem
  • 5-6 garlic pods
  • 5-6 green chillies
  • 1/2″ ginger
  • 1/4 tsp dry mango powder
  • 1 tbsp boondi
  • juice of half lemon
  • 5 ice cubes
  • 2 tbsp water
  • 1 tsp salt

 

  • For Pattice
  • 6 boiled potatoes
  • 3-4 chopped green chillies
  • 1 tsp coriander powder
  • 1 tsp red chili powder
  • 1 tsp cumin powder
  • 1 tsp turmeric powder
  • 1 tsp salt
  • 1/2 cup breadcrumbs

 

  • For Garnish
  • 1 finely chopped onion
  • 1 finely chopped tomato
  • chaat masala
  • sev (crispy gram flour noodles)

I am a big fan of Indian street food recipes, like Sev Puri, Dahi Puri and Pani puri. However, Ragda pattice is by far my favored chaat. They are typically enjoyed as snacks in Mumbai, yet are so delicious, it’s well worth a little bit of effort to make them from square one at home.

Step by Step Instructions

Making ragda pattice at home is really easy with some planning as well as complying with the development prep tips mentioned above. You essentially need to make Ragda (white peas curry), pattice, chop all veggies you intend to top it with and the chutneys. Lets see step by step of how to make these.
Step 1

For Ragda
Soak the dried white peas overnight (8hours) in water enough water so they are well under water even when the swell. Drain all the water next day and rinse them.

Step 2

In a pressure cooker, add 250 gms white peas (vatana) with 1 cup water, add 1/4 teaspoon turmeric powder and 1/4 teaspoon salt.

Step 3

Adjust the heat to medium-low and cook for 4 to 5 whistles. Remove from the gas let the pressure release on its own.

Step 4 

To make the masala, in a kadhai add 3 tablespoon oil. Once hot add 1/2″ ginger. Saute till aromatic.

Step 5

Add 1 big onion puree and cook till it turns light brown in color.

Then add 1 medium tomato puree. Cook for further 2-3 minutes on medium flame.

Step 6

Add 1/2 teaspoon red chili powder, 1/2 teaspoon cumin powder, 1 teaspoon coriander powder, 1/4 teaspoon turmeric powder, 2 teaspoon chicken masala and 1 teaspoon salt. Mix well.

Step 7

Add boiled chickpea to the above masala mix and cook for 2-3 minutes. Once cooked, keep it aside.

Step 8

For Date Tamarind Chutney
In a small sauce pan, add 200gms jaggery , 1/2 cup water and 15gms tamarind.

Step 9

Let it boil for 10 minutes, mix everything with a spatula till all the jaggery is melted. Once jaggery is dissolved let it cool down.

Step 10

Take mixer jar and grind the mixture well.

Transfer the mixture to the same sauce pan using a sieve, to get smooth chutney.

Step 11

Cook the chutney with 1 teaspoon red chili powder, 1/4 teaspoon black pepper powder, 1/4 teaspoon dry mango powder (amchur) and 2 tablespoon sugar.

Give it a good boil. Your Date Tamarind chutney is ready. Keep it aside.

Step 12

For Spicy Coriander Chutney
In a mixer jar, add 2 cup coriander leaves with stem, 5-6 garlic pods, 5-6 green chillies, 1/2″ ginger, 1/4 teaspoon dry mango powder, 1 tablespoon boondi, juice of half lemon, 5 ice cubes, 2 tablespoon water and 1 teaspoon salt.
Using ice cubes gives chutney beautiful green colour.

Step 13

Grind well. Your Spicy Coriander Chutney is ready, keep it aside.

Step 14

For Pattice
In a big bowl, add 6 boiled potatoes. Mash the potato completely.

Step 15

Add 3-4 chopped green chillies, 1 teaspoon coriander powder, 1 teaspoon red chili powder, 1 teaspoon cumin powder, 1 teaspoon turmeric powder and 1 teaspoon salt along with 1/2 cup breadcrumbs.
Breadcrumbs will help to bind the pattice and pattice wont break while frying.

Step 16

Mix everything well until combined. Start shaping pattice in small flat circle shape. Repeat the step and keep aside.

Step 17

Brush the pan with some oil and staring placing the pattice on the pan.

Step 18

Flip the pattice once you crust on the bottom of pattice. Cook the other side till you get crust on pattice. It will take around 3-5 on each side on medium flame.

Step 19

All the components are now ready and ready to serve. Staring by placing some radga on the bottom.
Place pattice on top and add finely chopped onions, finely chopped tomato, prepared green chutney along with sweet chutney. Squeeze some lime juice with some pinch of chaat masala and sev on top.
Your delicious Ragda Pattice is now ready.
