Potato croquettes perfectly golden brown on the top with a soft middle, bound together with cheese and seasonings. You can pair these with your favorite dipping sauce or eat them as is, and you’ll definitely have a terrific party game appetiser or a holiday side dish.

Potato Croquettes

Ingredients

  •  500 gms potato
  • 1 small diced capsicum
  • 1 1/2 tsp oregano
  • 1 1/2 tsp chilli flakes
  • 1/2 cup breadcrumbs to add in mashed potato
  • 2 tbsp maida (all purpose flour)
  • 1 tsp salt
  • breadcrumbs to coat

 

  • For Maida (all purpose flour) Slurry
  • 1/4 cup maida (all purpose flour)
  • 1/3 cup water
  • pinch of salt

Do you know what croquettes are named after? It’s a type of snack food whose name comes from the French word “croquer” meaning ‘to crunch’. Croquette is essentially a deep-fried food made from breadcrumbs, cheese, meat, or potatoes.

This is a very tasty dish that can be prepared in twenty minutes and can be made quickly. Potato Croquettes is an easy-to-prepare appetizer that required the combination of potatoes, cheese, oregano and chilli flakes. A few diced capsicum adds a nice texture.

Potato croquettes are deep-fried mashed potato and cheese balls rolled in breadcrumbs and dipped in a all purpose flour (maida) slurry and fried or baked until golden.

  • Boiled potato
  • Shredded processed & mozzarella cheese
  • Flour slurry– to coat the potato
  • Chilly flakes & Oregano– to spice it up
  • Vegetable oil– to help crisp up those breadcrumbs

Step by Step Instructions

Step 1

Take a large bowl and add 500 gms boiled potatoes. Mash potatoes completely.

Step 2

Add 1 small diced capsicum, 1 1/2 tsp chilli flakes, 1 1/2 tsp oregano, 2 tablespoon maida (all purpose flour), 1/2 cup breadcrumbs, 1 tsp salt and 1/2 tsp pepper.

Step 3

Mix it well until everything is combined. Take a small portion of mashed potato and roll them to form cylindrical shape while adding shredded cheese in between.

 

Step 4

Prepare maida (all purpose flour) slurry by mixing 1/4 cup maida (all purpose flour) with 1/3 cup water which will coat our potato croquettes. 

Step 5

Now take potato croquettes and first dip them in maida (all purpose flour) slurry then roll it with breadcrumbs. Make sure breadcrumbs are evenly coated. Remove extra breadcrumbs when necessary.

Step 6

In a kadhai, heat 1 1/2 inches vegetable oil over medium-high until hot. In batches, fry croquettes until golden brown on all sides, about 5 minutes per batch, turning as needed. Drain on paper towels.

Serve croquettes with mayonnaise or tomato ketchup as preferred. Enjoy..!
