Use of simple ingredients

Mutton Rogan Josh is a harmonious blend of succulent mutton pieces, aromatic spices, and a luscious curry base. The key to its distinct flavor lies in the careful selection of spices, including Kashmiri red chili, fennel seeds, cardamom, and cloves. Yogurt is used to tenderize the meat, while the addition of rajanjot lends a regal touch to the dish.

Start by marinating the mutton in a flavorful blend of yogurt and spices. Slow-cook the meat until it becomes tender and succulent, allowing the spices to infuse every fiber. The result is a dish that boasts a robust, aromatic profile that is sure to leave a lasting impression.

Pairing Perfection:

Mutton Rogan Josh is best enjoyed with traditional accompaniments such as steamed basmati rice or warm, flaky naan bread. The mild sweetness of a Kashmiri pulao can complement the rich and spicy notes of the curry, creating a well-balanced meal that will transport your taste buds to the heart of the Kashmir Valley.
