Milagu Rasam recipe or Pepper Rasam is a spicy variant of rasam made with black pepper, tamarind, tomatoes and other spices. A vegan recipe.

Ingredients

  • 1 tsp mustard seeds
  • 1 tsp cumin seeds
  • 2 garlic pods
  • 2 dry red chilies
  • 2 tbsp oil
  • 6-7 curry leaves
  • 1 tsp black pepper powder
  • 1 cup tomato puree
  • 1 1/2 cup water
  • 1 tsp salt

Rasam is a consolation food and I make it quite often. This recipe is one of those recipes that is exceptional for cold and cough. The recipe does no longer make use of rasam powder. All you want are some Indian herbs and spices in your kitchen. I even have added garlic in rasam as I feel it offers a very good flavor, even though you may bypass garlic if you want. It is also served as a medicinal drug for fast alleviation at some stage in common cold due to the medicinal aspects of pepper. It’s far commonly organized in the course of monsoon or winter season to get greater warmness from pepper.

Step by Step Instructions

Step 1

In mortal & pestle, add 1/2 teaspoon mustard seeds, 1 teaspoon cumin seeds, 2 garlic pods and 2 dry red chilies. 

Step 2

With a pestle coarsely crush these spices. Keep aside. you can also use a small grinder to coarsely crush these spices.

Step 3

In a pan, add 2 tablespoon oil, 1/2 teaspoon mustard seeds, 6-7 curry leaves and coarsely grinded spices.

Cook spices for a minute on low flame.

Step 4

Then add 1 teaspoon black pepper powder and a pinch of asafoetida. Cook for 30 seconds on low flame

Step 5

Add 1 cup tomato puree and cook for 5 minutes.

Add 1/2 teaspoon turmeric powder with  1 teaspoon salt.

Step 6

Cover and let it cook for 5 minutes on medium-low flame

Step 7

Add 2 tablespoon tamarind paste along with 1 1/2 cup water. Mix well

Cover and let it simmer for 10 minutes on low flame.

Step 8

Remove the lid and let it boil for 5 minutes until desired consistency is achieved.

Serve the milagu rasam plain or accompanied with rice and  sambar. You can garnish it with some chopped coriander leaves if you want.
