  • 2 tbsp oil
  • 1/2 tsp black peppercorn
  • 4  green cardamom pods
  • 3-4 green chillies
  • 2 garlic cloves, crushed
  • 1″ grated ginger
  • 1 sliced onion
  • 1 tsp ground coriander
  • 2 tsp ground cumin
  • 1 tsp salt
  • 500 gms chicken on bones
  •  1 tsp garam masala
  • fresh coriander for garnish

Step by Step Instructions

Step 1

Take 1 tbsp cumin seeds in a pan and dry roast till colour changes. Keep it aside.

Heat oil or ghee in a large pan or skillet over medium heat. Add the cumin seeds, peppercorns, green cardamom and sauté for a minute until they splutter and release their aroma.

Step 2

Add the sliced onion to the pan and sauté until it turns golden brown, stirring occasionally.

Step 3

Add the ginger-garlic paste to the pan and cook for another minute until the raw smell disappears. Add green chillies, cumin powder, coriander powder and salt. Saute it couple of minutes

Step 4

Now, add the chicken pieces to the pan and sauté them until they turn slightly browned on all sides. This will help seal in the juices and enhance the flavor.

Step 5

Cover the pan and let the chicken cook on low heat for about 20-25 minutes or until it is tender and cooked through. Stir occasionally to prevent sticking and ensure even cooking.

Step 6

Once the chicken is 90% cooked, remove the lid and add garam masala and roasted cumin seeds. Increase the heat to medium-high. Cook for another 5-7 minutes, stirring occasionally, until the excess moisture evaporates and the chicken gets a slightly caramelized texture.

Step 7

Garnish with freshly chopped cilantro leaves and remove from heat.
