  • 2 tbsp poppy seeds
  • 2 cup water
  • 2 ltr full fat milk
  • 2 cup sugar

Thandai is made by blending soaked almonds, poppy seeds, and melon seeds into a smooth paste. This mixture is combined with milk, sugar, and a blend of spices, including black pepper, cardamom, and fennel seeds. Saffron strands and rose water lend their distinct fragrances to the concoction. The resulting mixture is then chilled and served over ice cubes.

Step by Step Instructions

Step 1

In a pot, add almond, cashew nuts, pistachios, fennel seeds, melon seeds, peppercorn, poppy seeds with water. Let it soak for 6-8 hours.

Step 2

Prepare a smooth paste with all the soaked ingredients

Step 3

In a large pot, add milk and powdered sugar. Then add prepared paste and combine well. Make sure there are no lumps.

Step 4

Refrigerate the thandai mixture for a couple of hours to allow the flavors to meld and the drink to chill. Remove and strain the mixture using a sieve.

Step 5

To serve, pour the chilled thandai into glasses filled with ice cubes.

Garnish with chopped nuts (like almonds, pistachios) and dried rose petals.

Stir well before serving and enjoy the refreshing and aromatic thandai.
