Karela, or bitter gourd, is a unique vegetable that has a distinct bitter taste. It’s a staple ingredient in many Indian dishes, and it’s known for its medicinal properties. Despite its somewhat challenging flavor profile, karela is packed with health benefits. It’s an excellent source of vitamins B and C, folate, and minerals such as iron, potassium, and zinc. It’s also high in antioxidants and can help regulate blood sugar levels, making it an excellent food for those with diabetes.
The recipe for crispy karela takes the bitterness out of the vegetable by using a simple technique of salting the slices for 20 minutes before frying. The salt draws out some of the bitterness and leaves the karela with a milder flavor. The slices are then coated in a flavorful mix of spices and flours and fried until they are crispy and golden brown. The result is a delicious snack or side dish that is both nutritious and satisfying.
