Step by Step Instructions

Step 1

In a large pot, heat the olive oil over medium heat. Add the chopped onion, garlic, ginger, green chilly and sauté for 10 minutes, stirring occasionally.

Step 2

Add chopped potato and carrot with curry powder. Sauté for couple of minutes.

Add the water with par boiled split peas. Stir well. Cover the pot and cook.

Step 3

Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let the soup simmer for about 20 minutes, or until the split peas and carrots are tender.

Step 4

Use an immersion blender to puree the soup until smooth. If you don’t have an immersion blender, you can carefully transfer the soup to a regular blender in batches and blend until smooth.

Step 5

Season the soup with salt to taste. You can also adjust the consistency by adding more water if desired.

Step 6

Once the soup is seasoned to your liking, let it simmer for an additional 10 minutes to allow the flavors to meld.

Step 7

Serve the carrot and split pea soup hot, garnished with a drizzle of cream or some chopped fresh herbs if desired.
