Ingredients
- Broccoli – 150gms
- Potato – 150 gms (peeled and diced)
- Onion – 1 (chopped)
- Carrot – 1 small
- Celery leaves – 1
- Butter or olive oil – 2 tbsp
- Vegetable stock or water – 1 cup
- Milk or cream – 1/4 cup (optional, for creaminess)
- Salt – to taste
- Black pepper – 1 tsp
Broccoli is a green vegetable that looks like a tiny tree. It is very good for our body because it has vitamins that make us strong and help us fight germs. Step by Step Instructions
Step 1
Heat butter or oil in a large pot.
Add chopped onion, carrot and celery stick, sauté for 4-5 minutes
Step 2
Add 1 cup water and simmer for 25-30 minutes in low heat.
Then add diced potatoes and broccoli florets.
Step 3
Stir for 2–3 minutes and Cover and let it cook for 10-15 minutes, until potatoes are soft.
Use a hand blender (or transfer to a mixer) and blend until smooth.
Step 4
If you like it chunky, blend only half the soup and leave some pieces.
Return soup to the pot, stir in milk or cream
Step 5
Add salt and pepper.
And adjust seasoning with salt & pepper as per your preference.
Step 6
Serve hot with a slice of garlic bread or toasted baguette for a wholesome meal.
