Ingredients

  • 200gms spinach
  • 1 tsp salt
  • 1/2 tsp baking soda
  • 1 tsp sugar
  • Water to boil
  • 500gms chicken
  • 1 tsp red chilli powder
  • 1/4 tsp turmeric powder
  • 1tbsp kasturi methi
  • 1/2 lemon juice
  • 2 tbsp ghee
  • 1 tbsp oil
  • 1” cinammon
  • 1 badi elachi
  • 2-3 cardamoms
  • 7-8 peppercorn
  • 3-4 cloves
  • 1 bayleaf
  • 1 small maze
  • 1 tsp cumin seeds
  • 2 medium onion
  • 1 tbsp ginger garlic paste
  • 1 tbsp red chilli powder
  • 1 tbsp corinader powder
  • 1 tsp cumin powder
  • 1/3 cup curd
  • 1 tomato
  • Hot water

Step by Step Instructions

Step 1

Blanching the spinach:

Blanch the chopped spinach in boiling water for maximum 2 minutes. Drain and immediately plunge into ice-cold water to retain the green color.

Step 2

Drain again and blend to a smooth paste using a blender or food processor. Set aside.

Step 3

Marinate the Chicken:

In a bowl, mix the chicken turmeric powder, red chilli powder, kasturi methi, lemon juice and a pinch of salt. Set aside for at least 30 minutes.

Step 4

Cooking the Dish:

Heat ghee and oil in a large pan or skillet over medium heat. Add cumin seeds and let them splutter.

Step 5

Add chopped onions and sauté until they turn golden brown. Add Ginger-Garlic Paste and saute for couple of minutes until raw aroma is gone.

Step 6

Add cumin, coriander powder, red chili powder. Mix well and cook for a minute. Then add curd and cook well.

Step 7

Add chopped tomato and cook the masala well. Then add the marinated chicken pieces to the pan. Increase heat to medium-high and sauté for 5-7 minutes until the chicken is lightly browned.

Step 8

Stir in the spinach (palak) paste and mix well with the chicken and masala. Reduce heat to low-medium, cover the pan, and let it simmer for 10-15 minutes until the chicken is fully cooked and tender.

Step 9

Adjust salt and spice levels according to your taste. If the gravy is too thick, you can add a little water.

Step 10

Garnish with fresh cilantro leaves and serve hot with naan, rice, or roti.
Optionally, serve with lemon wedges on the side for added zest.
