  • 1 carrot
  • 1 big onion
  • 2 garilc cloves
  • 1.5 cup stock
  • 200ml orange juice
  • 1/4 cup yogurt
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 tsp red chilli powder
  • Optional: fresh parsley or cilantro for garnish

Step by Step Instructions

Step 1

In a large pot, heat the oil over medium heat. Add the diced onion, carrot, sweet potato and minced garlic, and sauté until softened, about 5 minutes.

Step 2

Add the vegetable broth and orange juice. Season with salt and pepper to taste. Bring to a boil, then reduce the heat and simmer until the sweet potatoes are tender, about 15-20 minutes.

Step 3

Once the sweet potatoes are cooked through, use an immersion blender to puree the soup until smooth. If you don’t have an immersion blender, you can carefully transfer the soup to a blender in batches to puree.

Step 4

Add yogurt and red chilli powder and give it a good stir.

Step 5

Continue to simmer the soup for another 5 minutes to allow the flavors to meld together.

Step 6

Serve hot, garnished with fresh parsley or cilantro if desired. Enjoy your sweet and tangy sweet potato and orange soup!
