Ingredients

  • 700gms mutton, cut into pieces
  • 1 cup yogurt
  • 3-4 mustard oil
  • 1/2 teaspoon cumin powder
  • 1 teaspoons coriander powder
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon red chili powder (adjust to taste)
  • 1 tablespoon kashmiri chilli powder
  • 1 teaspoon fennel powder
  • 1/2 teaspoon dry ginger powder
  • pinch of asafoetida
  • 4-5 cloves
  • 1 maze
  • 1 bayleaf
  • 2-3 green cardamom
  • 1” cinnamon stick
  • 2 big cardamom
  • 1/2” nutmeg
  • 2 tbsp salt
  • 2 cup water
  • 2-3 tablespoon ghee
  • 1-2 stick ratanjot
  • Fresh coriander leaves for garnish

Step by Step Instructions

Step 1

In a bowl, mix the yogurt with cumin powder, coriander powder, turmeric powder, red chili powder, fennel powder, dry ginger powder, kashmiri chilli powder and asafoetida.

Step 2

Heat mustard oil and let it smoke in heavy-bottomed pan or pressure cooker.

Step 3

Let it cool down a bit. Then add bay leaf, cardamom, badi elachi, peppercorn, cloves, nutmeg cinnamon stick and maze.

Continue cooking for a few minutes until the spices release their aroma.

Step 4

Now, add the marinated mutton and cook on high heat until the meat is seared.

Step 5

Add the curd mixture and cook till the oil starts to separate from the masala.

Step 6

Pour in enough water to cover the mutton pieces.
Season with salt, cover the pan, and let it simmer until the mutton is tender. If using a pressure cooker, cook for about 4-5 whistles. If not using pressure cooker, cook for approx. an hour.

Step 7

In another pan, add ghee and ratanjot sticks. Let ratanjot bleed its colour.

Check mutton is cooked, check the consistency of the gravy.  Strain and add in mutton 5 minutes before serving. 

Step 8

Garnish with fresh coriander leaves.
Mutton Rogan Josh is best enjoyed with steamed rice or naan.
