  • 1 tbsp oil
  • 1 bayleaf
  • 1 small onion
  • 1 tbsp grated garlic
  • 1/4 cup tomato puree
  • 1 1/2 tsp black pepper
  • 1 tsp salt
  • 3 tbsp coriander leaves chopped
  • 3 cup water
  • 3 tbsp corn flour slurry

Step by Step Instructions

Step 1

In a deep pot, boil water and add tomato. Let it boil for 1-2 minutes. Remove and instantly dip it in ice cold water.

Step 2

Remove the tomato skin and roughly chop the tomatoes. Keep them aside.

Step 3

Heat the oil in a frying pan and add bay leaf. Then add chopped onions and let it saute for couple of minutes on medium heat.

Step 4

Add grated garlic and suate until aromatic. Then add chopped tomatoes and let it cook for 5 minutes on medium flame.

Step 5

In the pan, add tomato puree, black pepper, salt and corainder leaves. Mix well and cook for further for 5 minutes.

Step 6

Add water, cover and let it boil for 10 minutes on medium-low flame. Stirring in between. Remove and let it cool before blending.

Step 7

Using an immersion blender or a countertop blender, carefully blend the soup until it’s smooth and creamy. Be cautious when blending hot liquids, and do it in batches if using a countertop blender.

Step 8

Using a sieve, strain the soup and add corn flour slurry. This will help the soup to thicken. 

Step 9

Give it a boil for couple of minutes. Ladle the hot tomato soup into bowls.

Serve hot and garnish with fresh cream.
